Die sehr alten Reben wachsen auf kargem, kalkhaltigen Lehm in 500 650 m Meereshhe. Die Ertrge sind sehr gering (20 hl ha) und wie alle Weine von Matassa wird ausschlielich mit heimischen Hefen vergoren. Der Most reift 14 Tage auf der Maische und kommt zum weiteren Ausbau fr 8 Monate in Betonbehlter.
